1-1/4 cup whole wheat flour
2 to 3 very ripe bananas (depending on size), peeled
4 oz plain or vanilla Greek yogurt
1 tsp baking soda
1/2 tsp vanilla
1/2 tsp salt
2 tbsp stevia
1/2 cup walnuts pieces
In a blender, mix bananas, eggs and yogurt til smooth. Mix flour, baking soda, stevia, salt and vanilla in a large bowl. Combine banana mixture into flour mixture til smooth. Chop walnuts and divide in two. Add half of chopped walnuts to batter and mix til evenly combined. pour batter into a greased loaf pan (& lined w/ parchment paper). Sprinkle remaining half of chopped walnuts over batter. Bake at 350 degrees for 60 mins or til a toothpick come clean from the center.
Cool completely before slicing.
