Breakfast Quesadilla






2 to 3 eggs

2 Ole brand low carb tortillas

1/2 cup lean turkey, cooked

1/2 cup chopped veggies

1/4 cup shredded cheese


**No Mess Flip Method: Whisk eggs and cook over med heat til underside is set. Slide spatula under egg and raise slowly from the center of the egg.  Allow the uncooked portions of the egg to drain off into pan. Turn spatula and carefully place egg back into the pan, uncooked side down.

Continue to cook egg. Layer in veggies and cheese. Cover for 2 to 3 mins til cheese is melted.

Place egg on one of the tortillas and cover with the other. Cook quesadilla on both sides til crispy.

Cut into quarters and enjoy.

Serves 1 to 2.
