3 to 4 chicken breasts (or thighs)
2 tbsp oil
1 tbsp Cajun seasoning
1 tbsp coconut flour
a pinch of salt (optional)
In a zip lock bag, add Cajun seasoning, coconut flour and salt. Zip close and shake bag several times til seasoning mixture is well combined.
Add chicken to zip lock bag and shake til chicken breasts are evenly coated with seasoning mixture.
In a saute pan, heat oil over medium high heat.
When oil is hot, gently place chicken breasts in saute pan.
Cook chicken for about 5 to 6 mins per side until internal temp reaches 165 degrees.
Serves 3 to 4.
