Ingredients – Chicken
4 chicken breasts, skinless and boneless
1 packet of Grill Mates Chipotle Pepper
1 head of lettuce, leaves peeled (see video below)
2 tomatoes, sliced
1/2 cup water
8 sliced of thick cut bacon, cooked (optional)
Directions – Chicken
Mix marinade and water in a med bowl. Add mixture to chicken breasts and coat well. Refrigerate for at least an hour.
Grill, bake or cook chicken however you like until internal temp reaches 165 degrees.
Ingredients – Broccoli Slaw
1 bag of broccoli slaw (12 0z)
1/8 cup mayo or greek yogurt
1/2 tbsp apple cider vinegar
a pinch of stevia to taste
a dash of lime juice
salt and pepper to taste
Directions – Broccoli Slaw
Mix all ingredients (except salt, pepper and stevia) in a med bowl til well combined. Season with salt, pepper and stevia to taste.
Layer chicken, tomato, bacon and broccoli slaw into lettuce leaves as you see fit.
Serves 3 to 4.
