4 cube steaks (1 lb)
2 oz pork rinds
oil for frying
season to taste
Crush pork rinds until they have the consistency of bread crumbs. I generally use a blender or a food processor to start then put them in a large freezer bag and roll over them with a rolling pin.
Season cube steak however you see fit. Whisk the eggs and set them aside. Pour crushed pork rinds into a bowl. Dip cube steak into egg mixture coating both sides then dip in pork rinds also coating both sides. Set finished product aside and repeat with remaining steaks until done.
Heat 1/4 inch of oil in a large pan over med meat. When oil is hot, cook steaks until golden brown on both sides.
Serves 4 to 5.
