Eggnog Mini Bundt Cakes

Ingredients

3 cups white wheat flour

1 cup eggnog

1/2 cup water

3 large eggs (lightly beaten)

8 oz Greek yogurt

2 tsp baking powder

1/4 tsp salt

1/4 tsp nutmeg

2 tsp Stevia

1 tsp vanilla

2 tbs dark rum or bourbon (optional)

Directions

In a blender, mix all dry ingredients for 2 to 3 secs (short pulses). Add eggs, yogurt, eggnog, vanilla & water to flour mixture. Blend til smooth (stopping to scrape the sides with a rubber spatula). Fill each cavity of the mini bundt cake pan half way. Bake at 325 degrees for 18-20 mins til tooth pick comes out clean.
