Egg Roll Ups






6 large eggs

2 to 3 slices of cheese, cut in half

diced veggies (optional)

season to taste

1/2 cup  to 1 cup of precooked meats (bacon, sausage, ham, etc)

SN: Sausage patties are generally around a 1/2 inch thick.

I cut my cooked sausage patties in half, reducing their overall thickness to about 1/4 inch.

In a medium bowl, whisk eggs thoroughly.

– Add diced veggies here or saute them separately and layer them in while performing the egg roll below.

Pour egg onto a well-greased rimmed cookie sheet or into a large casserole dish, 9×12 or larger. Tilt the pan to spread egg as needed.

Bake for 7 to 10 mins at 350 degrees til egg is firm.

Using plastic wrap, invert the baked egg onto a large cutting board or work space adequate for rolling the egg.

With the pan side up, layer in your precooked meats on to the egg as you see fit and roll. One layer at a time and roll, using the plastic wrap to tuck, roll and keep the egg roll tight.

Once you have completely rolled the egg, use the remaining plastic wrap to wrap the entire egg. It should look like a large burrito.

Let the egg roll rest for 2 to 3 mins so that it holds it shape. Unwrap, and slice the into 3/4 to 1 inch pieces.


Serves 2 to 3.
