Eggnog Bread Pudding


6 cups (about 6 slices) whole wheat bread cut in cubes

2 cups eggnog

1/4 cup greek yogurt

2 eggs, slightly beaten

1/2 cup raisins (optional)

1 tbs Stevia

1 tsp cinnamon

1/2 tsp nutmeg

a pinch of salt


Reheat eggnog and set aside. In large bowl mix eggs, eggnog, yogurt, stevia, cinnamon, nutmeg and salt. Stir in bread cubes and raisins. Pour into an ungreased deep baking pan. Bake at 350 degrees uncovered for 40 to 45 minutes until a knife inserted 1 inch from edge comes out clean.
