French Toast Cups (Low Carb)

Ingredients

8 slices of Ezekiel Bread (or a low GI bread like Whole Wheat) cut into 1/2 in squares

8 eggs

1-1/2 cups of Almond Milk

3 tsp of Vanilla

2 tsp of Cinnamon

3/4 cup of your fav fruits (or precooked sausage)

Directions

Mix milk, vanilla & cinnamon in a bowl. Load muffin cups with bread cubes (& fruit or meat).  Pour the egg mixture over each cup. Bake at 350 degrees for 20-25 min.
