Ingredients – Chicken
2 to 3 chicken breasts (boneless, skinless and butterflied)
spices for seasoning (I used Weber Kick’n Chicken)
Directions – Grilled Chicken
In a med bowl season chicken to taste. Mix well and refrigerate for 30 mins. Remove from fridge and grill butterflied chicken breasts fully spread out til internal temp reaches 165 degrees.
Ingredients – Zucchini Pasta
1 summer squash
3 tbsp Alfredo sauce
1/2 cup diced red bell pepper
1/2 tsp crushed red pepper
1 tbsp olive oil
A pinch of minced garlic
A pinch of basil
Directions -Zucchini Pasta
Using a spiral veggie slicer, cut zucchini and squash into zoodles. Over med heat, saute zoodles in olive oil for 1 to 2 mins then add alfredo, red pepper, garlic and basil. Saute for another 1 to 2 mins. Lightly tossing zoodles in the alfredo mixture til well coated.
Slice chicken breast and serve atop zucchini pasta.
Garnish w/ red bell pepper, parsley and Parmesan cheese as you see fit.
