Ingredients – Chicken
2 chicken breasts (skinless and boneless)
1 packet of McCormicks Grill Mates Mesquite marinade
1/2 cup water
Directions – Chicken
Creating bun size fillets: Butterfly and separate chicken breast. Then cut each half of the breast in half. Essentially creating 4 equally sized pieces out of one chicken breast. Repeat with remaining chicken breast.
Combine water and marinade in a small bowl. Remove 1 oz of marinade and set aside for glaze (see below). Add remaining marinade to chicken breast and mix well. Refrigerate for 45 mins. Remove from fridge and grill til internal temp reaches 165 degrees.
Brush cooked chicken breasts w/ glaze and sear on both sides.
Ingredients – Glaze
1/4 cup ketchup
1 oz mesquite marinade (reserved from above)
Directions – Glaze
Combine all ingredients in a small bowl with a whisk til smooth.
Ingredients – Sandwich
4 whole wheat buns
2 cups field greens
1 cup of your fav veggies (optional)
1 tomato, thinly sliced
1/2 cup homemade ranch dressing
Directions – Sandwich
Using 2 pieces of chicken, stack ingredients onto bun as you see fit.
