Honey Teriyaki Grilled Chicken and Veggies





Ingredients – Chicken

4 chicken breasts, butterflied

1 cup teriyaki sauce

1/4 cup honey

Spices for seasoning

Directions – Chicken

Lightly season chicken to taste and set aside for 30 mins to marinate. Mix honey and teriyaki sauce in a med bowl with a whisk and set aside.  Grill chicken on a greased grill over medium heat until done. Internal temp: 165 degrees. Dip chicken in marinate coating both sides and return to grill for a 1 to 3 mins per side.

Ingredients – Veggies

2 zucchini, sliced 1/2″ thick

2 yellow squash, sliced 1/2″ thick

1 egg plant, sliced 1/2″ thick

2 red bell pepper, sliced 1′ to 1-1/2″ thick

1 lime

2 tbsp olive oil

salt, pepper and garlic for seasoning

Directions – Veggies

Squeeze juice from limes and set aside.

Place veggies in a ziplock bag. Add juice from lime, olive oil, salt, pepper, garlic and season to taste. Mix til well coated.

Grill veggies on a greased grill until tender and lightly charred all over, about 8 to 10 mins.

Serves 4 to 6.
