Low Carb Cheddar Biscuits






5 to 6 tbsp butter

4 eggs

2 packets of stevia (or other sugar substitute equal to 2 tbsp of sugar)

1/3 cup coconut flour

1/2 cup shredded cheddar

1 tsp baking powder

a pinch of salt


In a small bowl, melt butter in microwave. In another small bowl, whisk eggs.

Note: Do not skimp on the butter in this recipe. The butter is the binder. It is the difference between solid, flaky biscuits or a pan of biscuit crumbs.

In a small bowl, use a fork to mix the baking powder and coconut flour til well combined. Add coconut flour mixture and all remaining ingredients into a large bowl or stand up mixer, mix til smooth. Use a rubber spatula to scrape the bottom and sides of the bowl to aid in the mixing process.

Line a rimmed baking sheet with parchment paper. Using two tablespoons, scoop and form mixture into balls, place on parchment paper. About 6 to 8 balls. Do not crowd. Leave room for the biscuits to spread as they bake. Give a small press to the top of each biscuit with the back of the spoon. This helps the biscuit spread out.

Bake at 400 degrees for 12 to 15 mins until edges start to brown.


Serves 6 to 8.

Note: Add 1/4 cup of bacon crumbles to make Low Carb Bacon Cheddar Biscuits.
