Low Carb Chocolate Waffles





Ingredients – Waffles

1/2 cup New Hope Mills Low Carb Pancake & Waffle Mix

2 egg

1/3 cold water

1 to 2 packets stevia (or equal sugar alternative)

1 tbsp butter, melted

1/2 tsp cinnamon

1/2 tsp vanilla

2 tbsp unsweetened cocoa powder

Directions – Waffles

Using a whisk, combine pancake mix and cocoa in a large bowl til even consistency is acquired.

Whisk eggs and melted butter in a separate bowl.

Add egg mixture, water, stevia, cinnamon and vanilla to large bowl.

Mix til smooth and desired consistency is obtained.

Note: for a thinner batter, add more water and stevia. ( I added 2 to 3 tbsp of water and used 3 total packets of stevia)

Cook in waffle iron til done.

Ingredients – Strawberry Cream Cheese Topping

4 tbsp strawberry cream cheese, softened

3 tbsp butter, softened

2 to 3 packets of stevia (or equal sugar alternative)

1 tbsp heavy cream

1/2 tsp red food coloring

Directions – Cream Cheese Topping

Combine cream cheese and butter in a medium bowl.

Microwave covered for 15 to 20 then mix again.

Add stevia and heavy cream.

Mix with a whisk til smooth.

Add food coloring and mix til color is consistent.

Top waffle with cream cheese.

Serves 2.
