Low Carb Coleslaw





1 head of cabbage, chopped

2 large carrots, shredded

1/2 red cabbage, chopped

– or omit above and use 1 package cole slaw mix (16 oz) – optional

1/2 cup real mayonnaise (not miracle whip)

1/2 cup heavy whipping cream

6 packets of stevia (or other sugar substitute equivalent to a 1/4 cup of sugar)

2-1/2 tbsp lemon juice

1 – 1/2 tbsp white vinegar

1/2 tsp celery seed

salt and pepper to taste


In a large bowl, combine cabbage, red cabbage and carrots.

In a separate bowl, combine mayo, heavy cream, stevia, lemon juice, vinegar, celery seed, salt and pepper.

Pour mayo mixture over cabbage mixture and stir gently until well combined.

Refrigerate for 1 hour before serving.


Serves 6 to 8.
