8 mozzarella cheese sticks
2 cup grated Parmesan cheese
oil for frying
Create a work station that will have a place to dip the cheese stick in the eggs, coat them in the Parmesan cheese and a place to put the finished product. If you do not have bowls that are large enough for full length cheese stick, cut them in half before proceeding.
Start by lining a baking sheet with parchment paper and set it aside. Whisk eggs and set them aside. Pour the Parmesan cheese into a bowl.
Begin by dipping each cheese stick in the egg mixture and then coating it in the Parmesan cheese. Then dipping the cheese stick back in the egg mixture and re-coating it with Parmesan cheese. Finally, place the finished product onto the baking sheet lined with parchment paper.
Repeat this process until all done.
Place the baking sheet with the cheese sticks in the freezer for 1 to 2 hours. THIS IS NOT OPTIONAL. This will ensure that the Parmesan cheese crust does not fall off and the cheese stick does not melt prematurely while frying.
Deep fry (at 350 degrees) or pan fry each cheese stick until golden brown, generally 2 to 3 mins.
Cool and enjoy.
