Mac and Cheese Cups (Low Carb)


2 cups of low carb macaroni

2 cups of shredded cheese

1 beaten egg

1 cup of almond milk

1/4 cup of low carb bread crumbs


Boil macaroni for 6 mins (2 mins less than the cook time on the box). DO NOT FULLY COOK. Drain & return to pot. Mix in all remaining ingredients over med heat til blended & cheese is melted. Spoon into greased muffin cups & bake for 30 mins at 350 degrees. Allow the cups to cool so the cheese can set & hold the shape.

(Note: The bread crumbs & the egg act as a binder. Omit & the cup might crumble after cooling)
