1 head cauliflower
4 tbsp butter
season to taste (salt, pepper, etc)
– 1 to 2 cloves garlic, minced
– 2 tbsp sour cream
– freshly cut chives, thinly sliced
– 1/4 shredded cheese
– 1/4 cup chopped bacon
– 1/4 ranch dressing (omit the butter from the recipe)
Coarsely chop cauliflower into small pieces and discard stem.
Bring a large pot of water to boil. Place cauliflower pieces into a steamer basket.
Cover and steam for 15 to 20 mins til soft.
Note: You can also boil the cauliflower covered for about 10 to 15 mins til soft. Be sure to drain thoroughly. If your mashed cauliflower is too water, maybe you should try steaming instead of boiling.
Place cooked cauliflower in a food processor and puree for a few seconds. Add butter and seasoning. Continue to mix until smooth and well combined. Add flavor options either with the butter or garnish when complete.
Serves 3 to 4.
