Oven Crusted Sweet Potatoes





Ingredients – Sweet Potatoes

1 sweet potato, peeled

1 tbsp of olive oil

A pinch of spices to taste (salt, black pepper, red pepper & garlic)

Directions – Sweet Potatoes

Cut potato evenly into 1/2 inch thick discs. Season and mix well. Arrange discs so that they are not crowded on a rimmed cookie sheet covered in  parchment paper.

Bake at 400 degrees for 25 to 30 mins.

Ingredients – Seasoned Sour Cream

1 cup vanilla (or plain) greek yogurt (or low fat sour cream)

1/4 cup tomato

1/4 cup green pepper

1 tbsp red onion

1 tbsp jalapeños

A pinch of spices to taste (salt, red pepper & cumin)

Directions – Seasoned Sour Cream

Spin tomato, green pepper & onion in a food processor a few times to dice in to small chunks. Combine Greek yogurt, spices and tomato mixture in a med bowl with a whisk til smooth.

Garnished sweet potato w/ parsley and Parmesan cheese as you see fit. Serve w/ sour cream.
