Oven Fried Chicken and Waffles

Ingredients – Chicken

1 lb chicken tenderloins

1 cup low carb bread crumbs

Spice for seasoning

1 egg, lightly beaten

Direction – Chicken

In a med bowl, season chicken to taste & refrigerate for at least 30 mins. Remove chicken from fridge, add beaten egg and mix til coated. In a shallow baking pan, coat chicken in bread crumbs.

Place a greased wire rack on a rimmed cookie sheet. Arrange chicken on wire rack so that they are not touching. Bake at 400 degrees for 20 to 25 mins til internal temp reaches 165 degrees.

Ingredients – Waffles

1 cup whole wheat flour

1 egg

1 cup almond milk

4 oz greek yogurt

4 packets of stevia

2 tsp baking powder

1 tsp cinnamon

1 tsp vanilla

A pinch of salt

Directions – Waffles

Place all ingredients in a large bowl. Mix well & cook in waffle iron til done.

Combine finished products and garnish as you see fit.
