1 lb ground turkey (or chicken or pork)
2 tsp fresh sage, finely chopped
1 tsp kosher salt
3/4 tsp black pepper
1 tsp thyme, finely chopped
1/4 tsp rosemary
1/4 tsp nutmeg
1/4 tsp cayenne pepper
1/4 tsp red pepper flakes
1/4 tsp sriracha to make spicy (optional)
Mix all ingredients in a bowl. Knead until thoroughly incorporated. Form into patties or links.
Cook in a skillet over medium heat until browned, 8 to 10 minutes. Flip and continue to cook until done, 5 to 8 more minutes. Internal temp: 170 degrees.
Serves 4 to 6.
