Paleo Pumpkin Spice Muffins w/ Sugar Free Cream Cheese Frosting





Ingredients – Muffins

6 eggs

3/4 cup coconut flour

3/4 cup sugar free maple syrup

1/2 cup pumpkin puree

1 tsp apple cider vinegar

1 tsp cinnamon

3/4 tsp baking soda

1/2 tsp ground ginger

1/4 tsp ground cloves

Directions – Muffins

In a large bowl or standing mixer, combine all dry ingredients. Then add the wet ingredients and mix til smooth.

Divide mixture and fill a greased 12 cup muffin pan equally.

Bake at 350 degrees for 25 to 30 mins until edges are golden brown and center is firm.

Allow to cool before frosting.

Ingredients – Frosting

1-1/2 cup cream cheese, softened

1-1/2 cup butter, softened

2 tbsp almond milk

1 to 2 packets of Stevia (or sugar substitute equivalent to 2 tsp of sugar)

2 tsp vanilla

Directions – Frosting

Combine cream cheese and butter. Add stevia, vanilla and milk. Whisk til smooth.

Frost cup cakes.


Serves 12.
