Peanut Butter Stuffed French Toast


2 eggs (or 3 egg whites)

1/8 cup almond milk

1/2 tsp vanilla

A pinch of cinnamon

2 slices Ezekiel bread (or whole wheat)

2 tbs peanut butter (I used “2 tbs” of PB & Company White Chocolate Wonderful).


Mix everything except the bread & the PB in a bowl til egg mixture is bubbly (this will make the French toast light & fluffy). Spread the PB on a slice of bread, top w/ remaining bread & place into egg mixture carefully flipping several times to ensure you are making French toast & not bread covered in egg .

Cook til done & enjoy.
