Pulled BBQ Chicken

Ingredients

2 lbs chicken breasts (boneless, skinless)

1 bottle of sugar free or reduced sugar bbq sauce (18 oz)

1 to 2 tbsp olive oil

1/8 cup water

sriracha to taste (optional)

seasonings to taste

Directions

Lightly season chicken breasts and allow to marinate for 30 mins.

Heat olive oil in a large skillet. Add chicken then add water, cover and cook til internal temp reaches 165 degrees while turning occasionally.

Remove from heat and shredded chicken using two forks or grilling claws.

In a large pot, heat bbq sauce over medium heat, add sriracha and stir. Add chicken and mix til well combined. Cover, reduce heat and simmer for 20 to 30 mins til chicken is tender.

Serve however you see fit.
