My meal prep always starts w/ cooking my bacon & making some sausage balls. Some of bacon gets used in breakfast casserole & some of the sausage balls are bagged up as snacks. Whatever is left over is kept in my fridge for quick snacks. I bake my bacon on parchment paper for 18-20 mins at 400 degrees and the sausage balls for 20-22 mins also at 400 degrees. 1 lb breakfast sausage meat (I used Jimmy Dean)
Roll breakfast sausage meat into mini meat balls.
Cover a rimmed cookie sheet with parchment paper. Bake at 400 degrees for 20-25 mins til internal temp reaches 165 degrees.
Pro tip: prep your bacon first. Take the left over bacon grease & rub some on your palms before you begin rolling up your sausage balls. Trust me, you will get perfect sausage balls every time.
