Spicy Turkey Meatballs w/ Zughetti





Ingredients – Meatballs

1 lb ground turkey

1/4 cup  low carb bread crumbs

1/4 cup grated Parmesan cheese

spices to taste (season salt, onion, garlic, black pepper & basil)

1 to 2 tbsp red pepper flakes

2 tbsp of olive oil

1 egg

Directions – Meatballs

Mix, form & brown meatballs in olive oil. Remove from oil, drain and add meatballs to prepped tomato sauce below. Cook til internal temp reaches 165 degrees.

Ingredients – Meat sauce

1 jar of your fav spaghetti sauce

1 roma tomatoes, chopped

1 tbsp olive oil

1 to 2 tbsp sriracha to taste

Directions – Meat sauce

Lightly saute tomato in olive oil. Add spaghetti sauce and sriracha. Bring to a low boil and simmer. Add cooked meatballs and continue to simmer for 15 to 20 mins.

Ingredients – Zughetti

2 zucchini

1 tbsp olive oil

salt and pepper to taste

A pinch of minced garlic

A pinch of basil

Directions -Zughetti

Using a spiral veggie slicer, cut zucchini into zughetti . Over med heat, lightly saute zughetti in olive oil for 1 to 2 mins then season to taste. Saute for another 1 to 2 mins. Do not overcook.

Serve meatballs atop zughetti.

Garnish w/ Parmesan cheese as you see fit.
