Spinach Turkey Meatballs





Ingredients – Meatballs

2 lbs lean ground turkey

2 eggs (or 3 egg whites)

2 jalapenos (w/ seeds and veins removed)

1 cup chopped spinach (or mixed greens)

3/4 cup low carb bread crumbs

season to taste (seasoning salt, pepper, garlic & onion powder)

Directions – Meatballs

Dice jalapenos in a food processor until desired size pieces are achieved. Chop spinach to desired size.

Mix ground turkey, eggs, seasoning, bread crumbs, diced jalapenos and chopped spinach in a large bowl until thoroughly combined. Line a rimmed baking sheet lined w/ aluminum foil. Lightly grease aluminum foil to prevent meatball from sticking. Form 2′ to 3′ meatballs and place them on the aluminum foil so that they are not crowded. Makes 18. Bake at 400 degrees for 20 to 25 mins til internal temp reaches 165 degrees.

Ingredients – Meat sauce

1 jar of your fav spaghetti sauce

2 roma tomatoes, chopped

1 tbsp olive oil

sriracha to taste

Directions – Meat sauce

Lightly saute tomatoes in olive oil. Add spaghetti sauce and sriracha. Bring to a low boil and simmer. Add cooked meatballs and continue to simmer for 15 to 20 mins.


Serves 5 to 6.
