3 eggs (or 4 egg whites)
2 turkey sausage links, diced
1 cup mix greens, coarsely chopped
1 tomato, thinly sliced
1/8 cup shredded cheese (optional)
In a greased skillet, lightly brown turkey sausage over med heat. Whisk eggs and pour into skillet. Do not stir. Layer in tomatoes, mixed greens and topped with cheese.
Note: Use a 12 inch skillet and give the pan a 360 swirl after pouring in the egg will create a nice crispy edge on the frittata.
Cover and cook for 4 to 5 mins til egg is set.
