2 large sweet potatoes
4 slices of turkey bacon (cooked, drained & chopped)
1 cup of shredded cheese
Salt & pepper to taste
Wash, peel & cut sweet potatoes into 1/8 to 1/4 inch whole slices. Place slices in a large pot of water & cook until water begins to boil. Boil for 2-3 mins but do but do not fully cook. They will fall apart if you fully cook them. Drain & arrange on a greased cookie sheet (like shingles on a roof) in an overlapping pattern. Season w/ salt & pepper. Layer on cheese & turkey bacon. Bake for 15-20 mins at 375 degrees.
