Sweet Potato Hash Brown Cups


1 large sweet potato (peeled, seasoned & made into hash browns)

6 eggs

1 cup shredded cheese

1 cup (precooked) turkey sausage crumbles


In a greased jumbo muffin pan evenly distribute sweet potatoes & 1/2 cup shredded cheese. Compress hash browns & cheese w/ 1/2 measuring cup. Add turkey sausage & remaining cheese. Compress w/ 1/4 measuring cup to create a place for the egg. Add eggs (whole or scrambled) & bake for 20-30 mins at 350 degrees depending on desired egg consistency.
