Teriyaki Lettuce Wraps






1 lb ground chicken, beef, pork or turkey

1 red bell pepper, diced

1 green bell pepper, diced

1/2 onion, diced

2 Roma tomatoes, diced

1 cup broccoli slaw, diced

1 head of iceberg lettuce

1/2 cup low sugar teriyaki sauce

1 tbsp soy sauce

season to taste

Directions – Meat

Lightly brown meat over med heat. Add bell peppers, onions, tomatoes, broccoli slaw and continue to cook meat. Add teriyaki and soy sauce, mix til well combined. Once meat is cooked, set aside.

Directions – Wraps

With a knife, cut the bottom of the lettuce about a 1/2 inch just above the core. Then cut the head into quarters. Remove the inner most layers & discard. We will only be using the larger, outer most layers for the actual wraps.

Serve teriyaki meat mixture with lettuce wraps on the side.


Serves 3 to 4.
