Turkey Meatloaf w/ Mac and Cheese (Low Carb)

Ingredients – Turkey Meatloaf

1.5 to 2 lbs lean ground turkey

2 eggs (or 3 egg whites)

1/2 cup low carb bread crumbs

1 packet McCormick’s Meatloaf seasoning

1/4 cup almond milk

1/2 cup chopped veggies (bell peppers, onions, celery or any of your favs)

1/2 cup BBQ sauce

Directions

Mix well & divide meatloaf in a greased muffin pan (6,12 or 24 muffins). Top w/ BBQ sauce & bake for 40-50 mins at 350 degrees til internal temp reaches 165 degrees.

Note: Place muffin pan on a rimmed baking sheet lined w/ aluminum foil. This will protect your oven from spillage as the meatloaf cooks.

Ingredients – Mac and Cheese

1 cup low carb pasta

1/2 to 3/4 cup shredded cheese

2 tbs bacon crumbles  (optional)

1/4 cup almond milk

Directions

Cook pasta according to package directions, drain & return to stove. Over med heat, mix in all other ingredients til creamy.
