Sriracha Glazed Turkey Meatloaf Muffins

Ingredients – Turkey Meatloaf

2 to 2 1/2 lbs ground turkey

2 eggs (or 3 egg whites)

1/2 cup low carb bread crumbs

season to taste (seasoning salt, pepper, garlic & onion powder)

1/4 cup almond milk

1/2 cup chopped veggies (bell peppers, onions, celery or any of your favs)

Directions

Mix well & divide meatloaf in a greased muffin pan (6,12 or 24 muffins). Top w/ sriracha glaze & bake for 40-50 mins at 350 degrees til internal temp reaches 165 degrees.

Note: Place muffin pan on a rimmed baking sheet lined w/ aluminum foil. This will protect your oven from spillage as the meatloaf cooks.

Ingredients – Sriracha Glaze

1/2 cup ketchup

1 tbsp honey

2 tsp sriracha

A dash of steak sauce

Directions – Sriracha Glaze

Mix all ingredients in a bowl til smooth. Use as directed above.

Note: I glaze my meatloaf for a second time, after its cooked. This step adds to the presentation value as well as the taste.
