Whole Wheat Red Velvet Pancakes





Ingredients – Pancakes

1-1/2 cup whole wheat flour

1-1/2 cup almond milk

2 tbsp greek yogurt

2-1/2 tsp baking powder

1 egg, lightly beaten

4 to 6 packets of stevia

1-1/2 tbsp unsweetened cocoa powder

1/2 tsp red food coloring

1/2 tsp salt

Directions – Pancakes

In a bowl, create a well in flour. Pour all ingredients except food coloring (see design note below) into the well and combine til smooth. Add more milk depending on desired thickness.

Design note: Pour out 1/3 of pancake batter into a smaller bowl and set aside. Add red food coloring to remaining 2/3 of pancake batter and mix til well combined.

Pour batters in to separate egg rings and cook til done.

Ingredients – Cream Cheese Topping

2 oz 1/3 less fat cream cheese

3 tbsp plain greek yogurt

2 to 3 tbsp honey (to taste)

1 tbsp almond milk

Directions – Cream Cheese Topping

Mix all ingredients in a bowl with a whisk til smooth.

Serve pancakes dusted w/ powdered sugar & cream cheese topping as you see fit.

Ingredients – Strawberry Parfait

6 to 7 fresh strawberries

5 oz vanilla greek yogurt

Directions – Strawberry Parfait

Hull and quarter strawberries. Layer strawberries and greek yogurt as you see fit. Top w/ a fresh strawberry and serve.
